    Soja Frites
- 1 lb extra-firm tofu (pressed, frozen, thawed, and drained)
- Coarse salt and freshly ground pepper
The night before (if possible otherwise skip the freezing/thawing and do the rest of the steps)
- Cut tofu into 1/2" slabs.
- Fold a clean towel around tofu and press to remove excess liquid.
- Freeze.
To prepare:
- Thaw tofu.
- Preheat broiler and line a baking sheet with a Silpat pad.
- Cut the tofu and arrange it onto the Silpat and salt and pepper it to taste.
- Place under broiler and cook, turning every 2 to 3 minutes until golden brown and crisp, for approximately 10 minutes.
