Joe's Special
- Brown 1/2 lb. of lean ground round. Drain.
- Saute 2/3 cup chopped onions (I cook them in the microwave to save on the fat.)
- 3/4 cup frozen chopped spinach, thawed and squeezed dry.
- 1/4 teaspoon Italian seasoning or 1/8 teaspoon dried oregano + 1/8 teaspoon dried basil.
- Mix all the above ingredients together in a skillet.
- Beat three eggs and add to the mixture.
- Scramble it all together and top with low fat grated Parmesan.
